Rice
- For making chicken fried rice always prefer al dente non-sticky and non-mushy rice.
- Use always medium to long-grain rice. I recommend using basmati rice.
- Use boiled rice at room temperature. Make sure they are cool before use. As my family doesn’t like refrigerated or stale rice I boiled the rice half an hour before.
- For boiling rice, you can use a regular cooker or instant pot. I recommend using a deep pot with surplus water.
- When rice is al dente cooked immediately stain it in a strainer and cover it with a piece of cloth to prevent drying. Because dry rice cannot pick the spices.
Chicken
- I used Chicken breast piece and cut it into small pieces So it can stir fry easily. The bigger pieces become hard and non-succulent.
- Here I have used raw chicken you may use pre-boiled chicken also.
Egg
- My family enjoyed fried scrambled eggs, so I used that. While corn starch is used in restaurants to coat chicken, I don’t like that method much.
Soya sauce
- The star of any chicken fried rice recipe is soy sauce, the main ingredient that helps add a spicy kick to the chicken and vegetables.
- Sometimes I use only black pepper with some homemade sauce but in this post, I used soya sauce from the market.
Veggies

- Wash and rinse the rice properly in running tap water. Soak them for 15-20 minutes. Take a pot add 4-5 cups of water and wait for a boil. Then add rice after draining water. 5. Stir fry veggies with chicken pieces for 2-3 minutes.

7. Fry until rice becomes hot and settle with veggies and chicken.

Notes
- Always use al dente non-mushy rice. Otherwise, they cannot set and pick up chicken and vegetable flavors.

- Use salt with caution because soya sauce is a bit salty so use salt accordingly.
- You can remove some veggies you don’t like and use their substitutes like spring onion, or some green chili to spice up a bit more.
- Don’t add up more ground black pepper otherwise your rice taste will get spoil.
